Resumo

The aim of this study was to determine the optimal conditions for the extraction of proteins through the use of chemometrics using a factorial design 24 with repetition, the extraction of protein concentrate from water hyacinth (Eichhornia crassipes) River Apodi / MossoroÌ. For the extraction of protein concentrate was conducted primarily the process of optimizing the experimental procedure using a factorial design 24 with repetition, with 2 levels and 4 factors. The results were used to determine the optimal conditions were pH = 13, pH precipitation = 4, temperature ambient and extraction time of 30 min. It can be seen that the process becomes efficient under these conditions, as shown by the results obtained of 73% proteins and aminoacids by the method of p-benzoquinone.
