The cowpea (Vigna unguiculata L. Walp) is one of the major food crops in northeastern Brazil. The widespread consumption, with acceptance in all social, economic and regional levels is the highest in the world. In the Northeast, the average consumption is 198 kg / year / inhabitant. In Rio Grande do Norte, the cowpea, Vigna beans or cowpea, as it is known, it has great socio-economic importance as a source of nutrients in food, with great emphasis among agricultural products. To improve productivity and resistance to pests, two cultivars were developed exclusively by EMPARN (Agricultural Research Company of Rio Grande do Norte), for breeding. Several breeding studies have been conducted with the aim of increasing the agronomic potential and nutritional value of beans varieties. Thus, the study aims to determine the chemical composition and the mineral phosphorus levels four cowpea cultivars (Vignaunguiculata L. Walp) grown in soil Natal. Samples were provided by EMPARN, two improved (Potiguar and laughter of the year) and two Creole (rib of beef and Canapu). The seeds were crushed and processed into flour and the samples were carried out moisture and ash determinations by methods gravimeÌticos and phosphorus spectroscopy UVvis. The results indicate that a portion of 100g of cowpea contributes about 80% of the daily requirements according to the RDI (Recommended Daily Intake), these results will be important in future nutrition research and to build a Brazilian table of chemical composition of food.
