QUALIDADE FÍSICO-QUÍMICA DA ÁGUA DE COCO COMERCIALIZADA POR AMBULANTES NO MUNICÍPIO DE MOSSORÓ/RN

Resumo

Coconut water has been gaining ground in the market as a vast commercial potential drink, as well as being a natural product, has low calorie, considerable nutritional value with soft, pleasant aroma and flavor. It is a soft drink, refreshing and low in calories, consisting of water, sugars, protein, vitamins and minerals, and is presented as a possible replacement for drinks used for rehydration after exercise. In addition, it is sold by street vendors. The aim of our study was to evaluate the physical and chemical quality of coconut water commercialized by street vendors in the city of MossoroÌ-RN. Eight were collected coconut water samples cooled from different vendors and collected pH, titratable acidity, soluble solids - SST (brix), ash and lipids. The Adolf Lutz Institute methodologies were used but with modifications. All analyzes were carried out in five replications. The sample C1 showed the following physical and chemical parameters, pH 5.03, titratable acidity 1.08%; degree Brix 5.5; ashes 0.43% and 1.03% lipids. The sample C2 obtained the following physico-chemical parameters, pH 4.88, titratable acidity 1.2%; degree brix 4.75; ashes 0.46% and 3.3% lipids. The sample C3 presented the following physicochemical parameters, pH 5.97, titratable acidity 0.67%; degree brix 6.25; ashes 0.45% and 3.39% lipids. The sample C4 demonstrated the following physico- chemical parameters, pH 5.06, titratable acidity 0.97%; degree brix 5.75; ashes 0.42% and 1.76% lipids. The sample C5 obtained the following physico-chemical parameters, pH 5.21, titratable acidity 1.1%; degree brix 5.75; ashes 0.56% and 3.4% lipids. The physicochemical parameters of the sample were as follows C6, pH 4.95, titratable acidity 1.3%; degree brix 5.75; ashes 0.54% to 3.8% lipids. The sample C7 demonstrated the following physico- chemical parameters, pH 4.84, titratable acidity 1.06%; degree Brix 5.0; ashes 0.39% and 3.0% lipids. The sample C8 presented the following physicochemical parameters, pH 4.92, titratable acidity 1.47%; degree brix 5.25; ashes 0.49% and 3.82% lipids. The results show that coconut water sold by itinerant shows physicochemical parameters within the law, except for acidity that obtained values well above those permitted by law. Therefore, the samples are in good physical and chemical parameters, except for acidity, and the sample C3 presented the best quality for consumption.
